2018 Domaine de l'Enclos 1er Cru Vau de Vey BIO

Spread over an area of 29 hectares, the Enclos estate cultivates certified organic vines. These are spread over 4 levels of Chablis denomination and, in particular, in some of the most beautiful terroirs of the vineyard. Romain and Damien Bouchard manage their ancestors' estate. They use their experience to make wines with simple, respectful and unadorned practices.

The location of Premier Cru vineyard Vau de Vey is ideal. Located on limestone, it is the terroir of choice for the largest Chablis. The grapes are harvested manually (quite unique in Chablis) with transport in small crates to protect the fruit. After gentle bruising, the wine remains raised on the dead yeast cells (Sur Lie) for 9 months without battonage and undergoes spontaneous malo. Very light filtration using Kieselguhr. This 2018 is characterized by an excellent combination of bold minerality and limestone. It is a grand wine with a rich and fleshy texture.

In the nose of the Domaine de l'Enclos 1er Cru Vau de Vey we smell fresh yellow apple and pear, smokiness, wet stones and a little caramel. In the mouth fine acidity, saltiness, apple, stone fruit and a light mix of smoke, saltiness and a hint of caramel. Elegant and sparkling clean.
