The healthy ripe grapes are crushed and fermented in small containers at a uniform and regulated temperature. Soaking on the peels for more than a month. Maceration in stainless steel tanks. Six months in new medium-toasted French oak barriques; than 4 months in bottles for further refinement.

The Cignomoro is a 100% Bianco di Alessano. This white grape comes from Puglia (the 'heel' of Italy) and it can thrive on poor soils. It has traditionally grown there as well as in Calabria. It therefore fits perfectly with the dry areas of the hills of the Valle d'Itria.

The grapes for the Cignomoro 30 Vecchie Vigne Old Vines Bianco di Alessano are softly pressed and the must is fermented in barriques and further developed in these barriques for 4 months. Thus, to form a harmonious unity, a fine wood aroma is combined with a multi-layered structure of the wine.

In the glass, this top white wine from Cignomoro is intense straw yellow with golden accents. The bouquet is intense and refined with delicate notes of jasmine, blossoms and lingering fruit aromas of golden apple with tropical nuances, vanilla almonds and honey. The taste is full and round, with refreshing acidity and light aftertaste. Delicious with goat cheese and poultry.
