The Lalume is a new wine from the Dominio do Bibei in Ribeiro de Sacra. It is a wine made from the Treixadura grape Treazadura from vines between 10 and 30 years old. The fermentation takes place at a very low temperature and after that the wine remains in contact with its lees. The wine is aged in French oak barrels, egg-shaped concrete tanks and stainless steel tanks. She has a second care with her fine dregs. The Lalume is a beautiful unique white wine in which, as with all wines from Dominio do Bibei, the wood remains subordinate to the unique mineral expression and effortlessly intertwines in the beautiful texture that perfectly balances softness, tightness and freshness. At Dominio do Bibei they work together with the well-known wine consultants Sarah Perez and René Barbier (DIDO, Clos Mogador, Espectacle, Nelin) and they work from sobriety and respect for the history of the terroir. The Lalume is fresh, mineral and mouth-filling at the same time, with white and citrus fruit as well as controlled, spicy wood, toast and very light vanilla tones and a slightly pleasant bitterness. This Lalume can also be served effortlessly at the table instead of a white Burgundy.
