The Clos Romans of the great winery Domaine Roches Neuves is also called a wine for the advanced wine lovers. This Chenin Blanc is pure, dense, fresh and chalky, full of excitement and character. The wine is clear, straw yellow almost crystalline in color and is particularly nicely concentrated, aromatic, complex and pure. The 1st nose combines concentration, freshness, generosity and strength. The 2nd nose reveals a multitude of fruit, flowers and plants. On the palate, this delicious white wine reveals an aromatic palette of white and exotic fruits and a hint of citrus fruit (lemon / grapefruit). In the final we detect beautiful floral notes of the acacia, the hawthorn or even the rose.

The Clos Romans is completely organic and provided with the Biodyvin label and Ecocert certification. Domaine Roches Neuves winery uses a completely organic and biodynamic method and always surrounds its grapes, vines and terroir with the utmost care. Here, real viticulture is still practiced with deep respect for nature and the environment. Of course you can also taste this concern in the great wines of this winery. The vineyards are located in the middle wine region of the Loire Valley: Saumur-Champigny. The area is located along the Loire about an hour's drive southeast of Angers. There is a relatively mild climate and the southern location of the vineyards ensures that the grapes quickly reach full maturity. The vineyards where this particular wine comes from are located in Parnay, overlooking the Loire, and are surrounded by walls from the 11th century. The terroir has a sand layer of about 30 cm before you come across the so-called Senonic limestone.

The grapes are naturally harvested manually. After a pneumatic pressing at a temperature of around 12 degrees, the wine goes into barriers of 400 liters for fermentation for 2 months. The wine then ripens on the fine lees for 9 months. This process takes place in the underground cellar of the winery where the low temperature ensures that the grapes come into their own even better. The Chenin Blanc grape variety has its origins in the Loire region but is also common in South Africa.

This delicious wine tastes great with fish (fatty fish such as salmon & tuna), chicken and poultry and vegetarian dishes. Can also be used with mild, soft cheeses.

Domaine Roches Neuves was founded by Thierry Germain, now a well-known and renowned winemaker, at the young age of 23. He did this to make his ultimate dream of making beautiful wines in his own winery come true. You can say that this was successful because the wines from this top domain have a stunning maturity with beautiful floral flavors. The wines are generally soft, intense and concentrated in the mouth. They are also perfectly balanced, full of finesse and refreshing vitality.
