Good wine is made in the vineyard', which is always true and so also for these Bordeaux varieties such as Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot that the Calligraphy is made of. The meticulous defoliation of the calligraphy around the forest zone allowed for better sunlight penetration, ensuring optimal ripening, color and flavor development.
The Cape winds further reduced yields and ensure optimum fruit concentration and health without the need for chemical interventions. After selective harvesting by hand, the grapes are destemmed and the individual berries are sorted on a vibrating table so that only the best grapes find their way into fermentation tanks.
Fermentation takes place in open-top fermenters with punch-downs every four hours ensuring optimal color, tannin and flavor extraction. The wine is then aged for 12 months in 100% French oak (38% new oak), followed by light filtration and then bottled
The Nitida Calligraphy is a South African Pomerol. Powerful and seductive, juicy and tight Merlot-dominated wine with Cabernet Sauvignon, Cabernet Franc plus Petit Verdot. In the glass a beautiful sparkling ruby red color with cherries, blueberries and light cherry tomatoes on the nose and deep earthy chocolate tones. Well balanced with fine grained tannins and well integrated oak and a sublime length.
