Sara Pérez is the wife of Rene Barbier who makes the famous Clos Mogador, Espectacle and Manyetes. Sara Pérez is also in charge of the Clos Martinet family domain. She also works closely with her brother Adria at Cims de Porrera. Father José Luis Pérez, one of the most important figures in the Spanish wine world, is proud of his children. He himself remains active in various wine projects. Together with her husband René Barbier (Clos Mogador), Sara Pérez owns and vines two beautiful wines on Venus La Universal. As a tribute to every small food manufacturer from the 1920s who wanted to grow up, Sara has christened this mini-domain Compania Universal de Vinos. There on 'La Uni', as she likes to call it herself, she has created almost the mother of all female wines: Venus. And 'Dido' is the more than exemplary daughter of 'Venus'. New is the Dido blanco, a complex white wine based on Macabeo and Garnacha Blanca, with partial fermentation on French oak. The wine deserves a little bottle aging and is best served in large glasses. Elegant 'feminine' wines with a lot of style.

The Venus is the top model from La Universal. Only around 6,000 bottles are produced and worldwide importers receive a small allocation of this fine wine every year. As Sarah describes it herself, the Venus is the result of an attempt to interpret femininity, the earth, through a bottle of wine: Here too, local grapes such as the Carinyena (Carignan), Garnatxa (Grenache) and Syrah are used based on the strong belief that the historical local grapes belong to a terroir and it is precisely there that the best result is achieved.

The wine comes from 4 parcels of Grenache and Carignan from old vines located between Pinyana and Crossos. The vineyard has both a northern and southern location (so heat and coolness). The grapes are seperately harvested, separately selected and processed, but ultimately (and that is unique with this wine) they try to ferment everything at the same time. The wine is fermented for no less than 28-32 days in open 500 liter wooden tanks. After the fermentation, the wine is allowed to mature in a 4000 liter barrel and a 300 liter barrel (this is added to the bottling) for 20-24 months.

Venus has a sparkling ruby red color in the glass with dark fruit and spices in the nose. The taste is mineral, lush and juicy with a great balance between the fruit and the acids. This is a beautiful elegant wine and a wine that surrounds you, it is delicious, intended for accompanying food, especially for traditional Mediterranean cuisine or with a nice piece of grilled meat. Naturally fair and organic because this is how this wine is made.
