Produced with grapes from their own vineyard, the Clos Nostre Senyor is the first Single Vineyard planted in Sant Sadurní d'Anoia over 50 years ago. The Clos Nostre Senyor ferments and matures in box wood barrique with the lees for ten months and then refermentation in the bottle, where it is allowed to develop for no less than 90 months and then undergoes further bottle aging before it is released to the market. Also with this Cava, two natural corks are used (during and after disgorgement and the wine has no extra sugar dosage (brute nature). Mestres only releases the wines when they think it shows the full potential. This 2014 was recently released and is the successor to the 2013. The Clos Nostre Senyor feels extremely young. It has a pale, bright colour, often paler than many younger wines and has a subtle and reserved nose. The taste is spicy, dry and serious. a very impressive Cava: it is still young and has potential for another decade (or more) in bottle, of the 2013 only 4,424 bottles have been produced.

FACT: Mestres has always printed the date of disgorgement on the label and Metres is one of the few houses that opts for traditional aging method and is the godfather in "Long Aged Cava". Under the tab Attachment you can find an article by Jancis Robinson with a tribute to these great Cavas which have a level that most top champagne houses cannot match.In the Penedes report of the Wine Advocate at the end of September 2022 , LUIS GUTIÉRREZ writes:" ....To me, Mestres is the top quality producer in Cava, and they are somehow specializing in long aging and larger format bottles (magnums and larger). They are aiming at a segment of the market that has been neglected by the appellation: they look for drinkers of high-quality Champagne rather than trying to compete with Prosecco. To me, they are the best Cava producer today, with a great balance between acidity, oxidation and bubbles"

One hundred percent of the sparkling wines from Mestres are aged in the bottle under a cork. Mestres is a very traditional Cava producer and is compared in style to the "López de Heredia & Tondonia" among the Cavas. Drink the wine between 8-15ºC and the advice of Mestres is to drink it even around 14-15 degrees. The Nostre Senyor Gran Reserva Brut Nature is a blend of Macabeu (20%) Xarel lo (65%) Paradella (15%) coming from vineyards planted more than 50 years ago. Also with this Senyor two corks are used for each bottle to make the cava. The base wine is fermented and aged in chestnut barriques on its lees for 10 months. The second fermentation in the bottle is completed in contact with the first 100% natural cork, in horizontal position for 80 months in the traditional bottle again on its lees. After the disgorgement (manual process of removing the dead yeast cells), the second cork and the accompanying plaque are placed in the bottle. The 2012 Senyor was not released until the end of October 2021.

Mestres are thus the Parents of Brut Nature Today, the 29th generation of the MESTRES family follows the path of their predecessors and maintains that restless and enterprising spirit that characterized the MESTRES family, a winery with seven centuries of history.

During all these years we have been able to follow tradition and respect a philosophy of unique elaboration, bringing the name MESTRES and the word CAVA to excellence. Mestres is the living history of Cava. Today, MESTRES cavas all have very high ratings.

Due to the double natural cork and the long aging, the Cava's are in style with the white Tondonia Wines. Luis Guiterez of Parker writes "Mestres are a kind of Lopez de Heredia of Cava" Together with Recaredo, Mestres is without doubt the Specialist in Long Aged Cava's in which their top models are more than 30 years old before they can leave the impressive cellar and we have even been able to taste wines over 60 years old and these are still very much alive and spit out of the glass.
