2010 Canopy Kaos

Like all wines from Bodegas Canopy, this is absolute Value for Money. The 2009 Kaos is produced with Garnacha grapes from two vineyards in Cebreros which is situated on a slate soil. The grapes are fermented in clusters with native yeasts in open 1500 liter barrels and then the wine is aged for 18 months in 500 liter oak barrels. The technique of clustering parcels in a vineyard and then combining them into the right taste that the winemaker wants to obtain is a technique that is also used by Bodegas Pujanza , among others. Like all wines from Bodegas Canopy, these are completely organically grown and produced, so no chemicals, fertilizers or addition of sulfites.

The Canopy Kaos differs from the rest of the Garnachas mainly because the slate, dark fruit and earthy undertones of peat and graphite seem to be more integrated with the oak than usual. The palate is medium to full-bodied, with ripe tannins and again an earthy feel as well as a more pronounced mineral character. This is a very nice wine as we are enthusiastic about the entire range of Bodegas Canopy. Only 1467 bottles of the Kaos were produced.
